Acrylaway is a commercial asparaginase for food applications that effectively reduces acrylamide in dough-based products without influencing product taste or appearance.

 

Why Acrylaway?
Acrylaway, the new asparaginase from Novozymes is effective on a broad range of products, and tests have shown acrylamide reductions of up to 90 % in foods like crisp bread, biscuits and cookies, snacks and crackers.
