Product strength, form and optimal conditions

Acrylaway L is a liquid product, whereas Acrylaway 3500 BG is a solid, granulated product, both  with a strength of 3500 ASNU/g. .The temperature optimum is around 60°C pH optimum is around 7 (Note: Temperature and pH optimum are measured in buffered solutions. Conditions in dough may vary.) 

 

Application

The liquid product can be blended into the dough before the final product is baked or fried.  The solid product is readily soluble in water, meaning that both Acrylaway products added to water or other ingredients prior to mixing. 

The acrylamide reduction can be influenced by applying prolonged holding times of the enzyme treated food system before baking or frying. With longer reaction time of the enzyme the conversion of asparagine to aspartic acid and therefore the acrylamide reduction is increased. Water content, water activity, pH, and temperature will also influence the effectiveness of Acrylaway.

 

Dosage recommendations
The recommended dosages of Acrylaway vary depending on the flour quality, formulation, process and the desired acrylamide reduction. Recommended dosages are listed with the Acrylaway application section or in summary below:
